Wheel/Tyre combo
Would 17" wheels with 225 55 tyres fit a 75 with standard suspension, or would I get tyre rubbing?

Going down to 45 profile tyres you'll lose the 75 comfort, the ride will be noticeably harsher.

If I stick with my 16" unions what range of widths of tyre will fit?

The 17" serpents look great but the 45 aspect does make the car choppy on some surfaces - my 1.8T on 16's is more civilised in the ride department.
