Try unplugging the MAF as a starting point.

I'm used to driving a 3.0 tdi quattro a6 auto so don't know if it's down to driving that. It usually does it up a hill when setting off when it's cold.

I'm used to been able to leave the car in gear and it won't roll back when releasing the brake peddle and in drive.

Under load and stalling. Start with an injector leak back test. Likely to be seeing low fuel pressure

Would that come up with a fault code? I put it on a snap on scan tool and got nothing.

Either use an omitec T4 , chek on the t4 owners map for your nearest assistance. The cdt is not fully obd2 compliant.
Do a mechanical leakback check , your likely to have excessive on one or more injectors. I faulty injector will not put a warning lamp on.....but it will cut out under load

Also check the in-tank pump,if that has failed,it puts more stress on the under-bonnet pump,my manual cut out when i booted it,that's when i knew my in-tank pump had failed.
