Can be done. But there are more interesting possibilities with some hot engine gearboxes for front wheel drive cars, which would be far simpler.
Pretty much, converting it to rwd will be the hardest part I imagine With the changes to the floorpan

Just a wild card suggestion - why not use a FWD V8 set up ? There are a number of FWD possibilities from GM, such as the 2007 Pontiac Grand Prix. Or, if you wanted a European option, the V8 and 'box from a Lancia Thema V8. No idea if these would work, but I would imagine they would be simpler than re- engineering the car completely to RWD.

Different front chassis legs, bulkhead to remove and weld in new one, make transmission tunnel then cut out boot floor to accommodate the rear axle and that's just the basic body mods

I know that they say you need a larger transmission tunnel but is that not just due to the ford v8 having such a large gearbox?, would a bmw v8 and box be smaller, also as it uses a bmw rear end can you not just find a similar bmw rear axle?

The 260 uses Dana’s Hydratrak® limited slip differential system which I believe was used in some TVR's it's not from the BMW camp. I've no idea of the dimensions of various gearbox and engine configurations but there no transmission tunnel in a 75 body to speak of hence why one was put in to house the gearbox

Don't think you'll be getting a gearbox to fit in there without extensive modification.

only worth doing if it's something different so if that level of effort i'd be looking to see about 4 wheel drive.

I do know a man who could do that as well but it would be very expensive.
