A little update, I've still got a load of polystyrene sheets from having our furniture delivered earlier in the year. I've decided I'm going to use that around the walls under the railway, its all out of sight so doesn't need to be pretty, can be off cuts glued together and then held in place with bits of hard board and ply that I've got lying around. Once that's done I'll decide what I'me going to do with the rest.

PS. That pond floss stuff does look easy to work with, and cheap, but would it be very effective to insulate?

I would strongly advise against using polystyrene as insulation, that stuff burns hot and fast, and was in the past responsible for making a lot of house fires (when used as ceiling tiles) much worse than they might have been.
When I insulated an 8x12 shed I used the mylar coated bubble wrap (there are more technical multilayer insulators you can get as well. The advantage is that it can go across the internal framing and then have whatever boarding you choose used over the top of it. Worked a treat. Cool in the summer, minimal heating required even in sub-zero temperatures (providing the door is kept shut and attention is paid to sealing draughts).
