Its to keep their listing active when they have temporarily run out of stock.

When further stock arrives, it's quicker to adjust the price and available quantity than create a new listing.Also a continuous listing is ranked higher in searches (I think).

Surely it'd be easier to still advertise at the correct price first off, saves ammending listings afterwards

Costs more to remove the listing while you're out of stock and re-list later than it does to leave it listed with a silly price.

Because then he'd get a lot of bad feedback from people who have bought something that is seemingly in stock, only to find he hasn't got any and they won't get it for X amount of time...
