I made a Chicken risotto from last nights roast chicken leftovers for tea with garlic bread.

Cook chicken until browned,(fry), add onion and garlic and cook until garlic is golden , add chillies and fry for about 4 mins, add rice and stir fry for 2 mins, add stock a bit at a time, stirring all the time, once rice has absorbed the liquid ,add more, do this until the rice is soft, will take about 25 mins. While cooking the rice, boil broccoli for about 4/5 mins until soft. Once rice has absorbed all the liquid, add broccoli and a knob of butter, stir until butter is melted, serve with black pepper.

Got my medical booked for 3 weeks time, local surgery wanted £90 for it, looked online and there is a surgery in the town that just do PCV/HGV/TAXI DRIVER MEDICALS, FOR £50. I have to have one every five years, after a certain age. to keep my licence up to date,.
