Default Overheated

Folks I need some views/advice please

My ZT190 overheated on the way home from work last Thursday and is now with local garage (after being recovered home)

Garage tried replacement thermostat sensor, but when they run the engine the temperature is still all over the place. They are a bit scratching head at moment.

Can anyone make helpful suggestions as to what might have happened/failed and what is needed to fix?

There has coolant in the header tank (the recovery guy checked)
The car drove the short distance on Friday morning from my house to the garage with no signs of distress.

Am hoping we can get her back without too much expense.
I guess that's the risk using a 20 years old car as your daily.

Any help much appreciated
