Default Unsealed battery?

I wonder if any member is running their car with an unsealed 12v battery? These seem to be impossible to get these days, all batteries seem to be sealed now, for good reasons I know. I guess most of us of a certain age will remember unscrewing the battery cell caps and peering in to check the fluid levels and topping up if needed. The reason I ask is that there are vidoes on youtube of techniques to de sulphate dead batteries which apparently brings them back to life and I figured it would be worth a try once a battery needs replacing, nothing lost if the battery needs replacing anyway. Is anyone using a sealed battery which they have managed to remove the seal in one piece? I've come across an old dead Unipart battery in the shed but its impossible to get into without destroying the battery.
