Hi Bergen.
You could try a good sharp centre punch north, south, east & west, round the edge of the of the rotating fixing point, which may stop it from turning enough to remove the bolt.

You could also try drilling two small 2ml pilot holes and the add a couple of panel pins through the holes to stop it form turning highlighted by the green dots in the photo below, blue dots indicate NSEW points.
