The hydraulic pressure in the clutch system depends on the clutch diaphragm spring tension and its degree of deflection. It will vary somewhat between engines. I doubt you'll find a figure, but will be maximum near full deflection (pedal fully down). If you really need to know, I think you'll have to install a pressure gauge in the line to the slave.
