When I owned a 1.8T I removed the underbonnet proofing and binned it.

Didn't make any difference, no extra sound at all, just a lot cleaner engine as mine was slowly falling apart.

To remove I put a large sheet across the whole on the engine bay and prised out the domed clips with a flat bladed screwdriver.
