It's the only explanation for the low running temperature. Unrestricted coolant flow keeps the engine too cool. The stat moderates the flow to the radiator. This maintains the normal running temperature near 90C. It's unusual for a V6 stat to 'fail open' in the usual way of things. It would be interesting to see it if you can ask the garage to save it for you.
