It's definitely not Walnut or as others have suggested Light oak

If it's Grey/Green in colour it sounds like a dark oak Steering wheel that's degraded in the sun, it's a very common occurrence.

Please be aware some steering wheels are not wood so it might not be possible to strip and recolour
