You'll be fine to leave the coating on. My new MG-R discs had that kind of silvery-grey coating on them. They looked very smart but the (reputable) garage owner said "Nah, it'll wear off after you hit the brakes a couple of times". Sure enough, it did.
As said though, it's an anti-corrosion protection whilst they are in storage/transit.
