As above really - you can sync as many devices with iTunes as you wish and each will be recognised as a different device - even if they are both iPod Nano's, for example.
The latest iTunes (version 9) allows you to select which items are synced with your device on a per-device basis. Meaning that when you plug a device into your computer it's individual settings will be remembered for the next time.
