Cat C's are often no problem, if the repair is carried out well and in many cases the are not major,
The thing to think of here is what repair was done?
Who did the repair?
What are you wanting from the car? if it's for immediate resale and profit then a Cat C may not be the ideal choice, but lets face it, you do not buy a 75 for a quick resale and profit.

Question is what is the argument against the CAT C, is it because it has had panel damage, then ask yourself, were bumpers not replaced because they were damaged?
So if the repair is good, then bite the bullet and buy, after all the CAT C affects nothing, the insurance premium will stay the same the only difference is 'you' know it has had work done to keep it alive.... and that can be said for the majority of older 75's
