Doh!

I double checked the fuses as I just couldn't understand what was wrong.

It dawned on me that I checked the wrong 15 amp fuse

After realising my error, I pulled out the 15 amp fuse for the amplifier, and low and behold, a blown fuse! Swapped it with the horn fuse, fitted the stereo back and it all began working again!
